- 2 cups peeled and diced potatoes
- 2 tablespoons butter
- 2 cups chopped cabbage
- 2/3 cup grated cheddar cheese
- 1 large onion chopped
- Salt and pepper to taste
Cook potatoes until tender (but not over done), drain, rinse under cold water and mash slightly with fork. Melt butter in pan, add onion and cook over low heat until soft and golden. Add cabbage, cook and stir for about 5 minutes. Add potatoes, salt and pepper and remove from heat. Stir in cheese and place all in a Pyrex dish. Sprinkle with more cheese and bake at 350 for about 20 minutes.
Really good served as a side dish with baked ham and sweet potatoes. I’ve made it for Sunday night supper with some bacon on the side. Once I threw in some left over chopped broccoli and that was very good. While I’ve not yet tried it, I think the ingredients would be a good addition to some chicken stock with bits of chicken for a nice winter’s day soup.
